Ugly Vegetable Soup

This week we read a story called The Ugly Vegetables which is about a young girl who is disappointed when her mom plants a Chinese vegetable garden, all the neighbors plant beautiful flowers and they have “ugly yucky vegetables”.  We made our own “Ugly Vegetable” soup, full of different kinds of vegetables including carrots, celery, onions, broccoli, bok choy, potatoes, green beans, and a rutabaga.  Even though it was still a little crunchy at the end of the day, the students loved it and ate every last bit!  So if your kiddo comes home and says they don’t like vegetables, I’d have to disagree!!
